Sheila's Custard
Custard
Sheila would often make this and serve with fruit salad or maybe something like Old Cape Brandy Pudding.
Ingredients
(eggs, milk, sugar, vanilla essence)
3 eggs
3 cups milk
3 desert spoons sugar
A few drops of vanilla essence
Directions
1. Beat eggs and 1 cup milk.
2. Warm the other 2 cups milk and sugar in a saucepan but don’t boil.
3. Slowly add the warm milk to the egg mixture, mixing well.
4. Pour mixture back to saucepan, place back to the heat and keep stirring until the mixture thickens.
5. Make sure the heat isn’t too high to avoid curdling the custard.
6. Mix in couple of drops of vanilla essence to the custard.
Variations
You can use a vanilla bean instead of essence. Split the bean and add seeds and bean to the milk when it is warming.
You can use only the egg yolks making a richer custard.
You can use a mixture of cream and milk making a creamier custard.
You can do all of the above making a yummier custard.
