Smoked Salmon
This is certainly a real treat and a fun thing to do.
We were skeptical at first that it would work, fearing that we'd smoke out the house, but it turned out great, and we do this a couple of times a year.
Often for Christmas, when the price of salmon is really high, we will buy a couple of Fresh whole salmon a few months before, fillet them, and de-bone, saving a couple la good fillets to freeze until needed.
Take them out the freezer 2 days before you want the meal, thaw, then add them to the salt and sugar mix 24 hours before you cook.
