Spicy Butternut & Sweet Potato Chicken Casserole
Yummy Chicken is a really great dish. A wonderful combination of flavors and a well balanced meal.
Ingredients
3 medium onions, roughly chopped
4 cloves garlic, chopped
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon Cape Malay leaf masala (medium strength)
1 teaspoon curry (mild to medium)
1/2 teaspoon salt
3/4 teaspoon crushed black pepper
3 chicken breast fillets (no skin, no bone)
1 sweet potato, peeled and cubed
butternut peeled and cubed (about the same quantity as the sweet potato)
1/2 cup tomato puree or 1/3 cup tomato ketchup
water
2 tablespoons smooth peanut butter
Method
Prepare the Onions and garlic.
Peel and chop the onions. Peel and chop garlic.
Add onions to the pan, add the olive oil and fry (sautée) on high for a few minutes.
When the onions are translucent and start to brown lightly, add the garlic, masala, curry powder, paprika, salt and pepper.
Cook, stirring all the time for a few more minutes.
Add the chicken breasts, brown on both sides. Keep stirring and prevent burning.
Prepare the sweet potato and butternut.
Peel and cube sweet potato and butternut.
Add the cubed sweet potatoes and butternut. Add the tomato puree, top up with water, covering the chicken. After a few minutes when the dish starts to boil, turn down the heat to low, and add the peanut butter. Mix together well and let simmer, covered with a lid for 40 minutes.
Serve and enjoy.
